Minestrone

With my new healthy regime, this week i am going to share with you my super delicious minestrone soup recipe.
It is my absolute favorite, i could eat it every day.. and i probably will.





Ingredients
1 tbs olive oil
1 leek, finely chopped
1 clove garlic, finely chopped
1 carrot, diced
1 stick celery, diced
1 zucchini, diced
1 small turnip, diced
1 small parsnip, diced
1 handful of green beans, chopped
1 small piece of pumpkin, diced
1 small piece of broccoli
1 small piece cauliflower
1 handful of frozen or fresh peas
1 tin of cannellini beans or dried
1 handful of shredded cavolo nero or cabbage
1.5 litres chicken stock {or water} just enough to cover vegetables
1 tin of diced tomatoes
1 bay leaf
salt and pepper
rind from piece of parmesan
{really you can add what ever vegetables you like or have in the fridge..}

Method
Heat olive oil in a large pot. Add leek and garlic. Cook gently until softened.
Add carrot, celery, parsnip and turnip and saute gently for five minutes.
Add tomatoes, stock, bay leaf and parmesan rind.
{you can simmer now for about an hour and then add the softer vegetables, but i just add them all together}
Now add zucchini, cannellini beans, pumpkin, green beans, broccoli, cauliflower and cavolo nero.

Simmer until all vegetables are well cooked.
Add salt and pepper to taste.
Remove bay leaf and rind before serving.
Serve with some nice crusty bread {i sometimes chuck some pasta in for the kiddlets too} or just enjoy on its own. Yum!

    Yummy soup! We had a less healthy pea and ham soup for dinner tonight. We've been having Friday night as soup and bread night and also having dessert. Way too many carbs but what the hell it's winter and it's what we feel like right now!

  2. I've been looking at making minestrone this coming week, and now I have the perfect recipe! And it comes from my all time favourite cook book no less - aka my bible! :)
    I've been having a lot of soups, stews and curries over the past few weeks. Nothing like winter food to warm up the body and soul. :) x
