All in the same boat. .



And i'm not talking about those cute little paper ones. I'm talking, colds, flus, aches, chills, headaches, pains, runny or blocked nose, congestion, dizziness, ear aches, fevers and head colds..

Seems everyone has something this week. I have read so many blog posts and know so many bloggers that are feeling under the weather. Myself included.

So lets all feel lousy and sorry for ourselves together. I know i am feeling absolutely miserable, i haven't felt this sick in years. So i apologize for not being around much this week, need to just lay low and try to get over this..

To my fellow sicky friends, take care, rest up and feel better soon. To all i hope you are having a better week than me.

Much Love..



I am starting to come around to this cooler weather. 
I love those stay at home days with my little lovelies. 
When it's too chilly to brave the outdoors.
We stay cosy in our jarmies for the entire day.
We play, we read, we do some crafty things. 
We do whatever we please.
I love it.

Grateful..



This week i am grateful for health.

I hate to be a little on the down low, my grateful post's are usually happy, warm and thankful..

But I want to take this moment to think about my gorgeous cousin Scott. He just turned seventeen. And has recently been diagnosed with life threatening bone cancer, as well as having lesions on both his lungs. He has had to have his leg amputated, undergone chemotherapy and two major lung operations... You can read more here.

Scotty my heart breaks for you, no one should have to go through so much, especially some one so young.. Yet you continue to put on a happy face, you are so strong and brave. I admire you so much and wish so badly that there was something i could do.. but for now i'm just sending so much love and positive energy your way.

Although it sounds a little insensitive.. I am grateful for our full health.
And endeavor to make the most of and live each day to its fullest.
Be grateful for each and everyday.
Life is so precious.

Minestrone

With my new healthy regime, this week i am going to share with you my super delicious minestrone soup recipe.
It is my absolute favorite, i could eat it every day.. and i probably will.





Ingredients
1 tbs olive oil
1 leek, finely chopped
1 clove garlic, finely chopped
1 carrot, diced
1 stick celery, diced
1 zucchini, diced
1 small turnip, diced
1 small parsnip, diced
1 handful of green beans, chopped
1 small piece of pumpkin, diced
1 small piece of broccoli
1 small piece cauliflower
1 handful of frozen or fresh peas
1 tin of cannellini beans or dried
1 handful of shredded cavolo nero or cabbage
1.5 litres chicken stock {or water} just enough to cover vegetables
1 tin of diced tomatoes
1 bay leaf
salt and pepper
rind from piece of parmesan
{really you can add what ever vegetables you like or have in the fridge..}

Method
Heat olive oil in a large pot. Add leek and garlic. Cook gently until softened.
Add carrot, celery, parsnip and turnip and saute gently for five minutes.
Add tomatoes, stock, bay leaf and parmesan rind.
{you can simmer now for about an hour and then add the softer vegetables, but i just add them all together}
Now add zucchini, cannellini beans, pumpkin, green beans, broccoli, cauliflower and cavolo nero.

Simmer until all vegetables are well cooked.
Add salt and pepper to taste.
Remove bay leaf and rind before serving.
Serve with some nice crusty bread {i sometimes chuck some pasta in for the kiddlets too} or just enjoy on its own. Yum!

The New Me. .


I have been afraid to blog about it before now.. i wanted to make sure i could do it.. i wanted to make sure the new me was here to stay, at least for now.

I have been inspired by so many people and blogs lately, in particular Amelia from weddings babies everything and her fabulous post about going sugar free. I am not doing 'sugar free' but it has motivated me to drop those dreaded carbohydrates. And embark on what i call the white and fluffy diet. I love them dearly, and in turn they unfortunately love me, so much so they want to stick around and hang out at my thighs and butt!

It has been a long time coming, and now it's time to drop the extra post baby weight {i never actually put on much during my pregnancy's, i put it all on after, and breastfeeding didn't seem to make an ounce of difference for me}.

So this is me day five, feeling great, no cheating or set backs and i haven't even been that grumpy or felt that hungry. I am no expert but i think it is fair to say i have been low carb for five days now! {I always get confused because some fruits and vegetables are considered carbohydrates..} Although i am allowing myself a small bowl of muesli in the morning and i think i'll have to treat myself over the weekend.. But anyhow.. this is a huge step for me.. no white and fluffy.. little woohoo for me!

After a trip to the market today the fridge is stocked full to the brim with lovely fresh fruit and vegetables. So no excuses, it's all salads, soups and protein from here on out.

This is the first time i have seriously embarked on such a serious dare i say 'diet'. I would love to hear any of your own experiences, advice or meal ideas.. please!

Goodbye to all that is white and fluffy and hello to the new me, i quiet like you so far..

Beautiful Bokeh..

I am really enjoying the 30 day photography challenge! I am loving learning new techniques and pushing my photography skills. I have used my iphone to take a lot of the photos but have also used my DSLR for some of the more trickier subjects.

Yesterdays image was bokeh, i didn't even know what it was until i read Chantelle from Fat Mum Slim's great post on the subject and did some research of my own.

I had so much fun capturing those lovely spots of light i thought i would share some of my favorite images with you..

The Weekend That Was..

I thought it would be nice to look back and reflect on our weekend. 
We didn't do anything particularly exciting. 
Work for me on Saturday, a spot of shopping and catching up with some friends. 
The weather has been incredibly icy! 
 We braved it on Sunday and headed out for a coffee and a trip to the park.
All topped of with some yummy takeaway for dinner at my brothers house.
No complaints from me!

Grateful..



This week i am cherishing the simple things, bringing it right back to the basics.. 

I am Grateful for five minutes in the car on my own.

My only me time for this week.

I am at home all week with the kids, and i don't have any outside help. Riley goes to pre-kinder two mornings a week. And my hubby is a great help. But that's it. It's all me.

Tonight hubby was home early so i poped up the road to get some dinner. On my own.

Peace. Time alone. Space to breathe. Just me.

My favorite song came on the radio. It must have know its just what i needed.

I turned it up. Loud. I sang, badly, to no-one.

It felt so good.

I felt like i was young again {if that's even possible?}

Grateful for that moment.

Then i was home again. Hungry kiddlets, like seagulls. Talking on top of each other, muttering words of longing and love. Chaos and noise. Then.. satisfied tummy's. Laughs, smiles and glowing faces.

So much warmth and love.

There is no where i would rather be.

That five minutes makes you appreciate every other minute. And i wouldn't have it any other way.

Friday Cook On..

I like the idea of sharing a recipe with you at least once a week. I love to cook and i make new things all the time, i just forget to take photos and post about them!

So I am going to try do a post every friday..
I will share a recipe i am loving, something i have made that day or week for the family.
Maybe you could share one with me too?

This week i made the most delicious sticky date puddings.. to.die.for. So simple to make and served with a nice scoop of creamy vanilla ice cream, they are the perfect decadent winter dessert.


Sticky Toffee Pudding

Ingredients
170g pitted dates, chopped
1 teaspoon bicarbonate of soda
300ml boiling water
60g unsalted butter
3/4 cup castor or brown sugar
2 eggs
170g self raising flour
1/2 teaspoon pure vanilla
Sauce
200g brown sugar
1/2 cup thick cream
125g unsalted butter
1 vanilla bean split

Method
Preheat oven to 180 degrees and butter an 18cm square cake tin or a muffin tin if you want individual puddings.

Mix dates and bicarbonate of soda. Pour over water and leave to stand.

Cream butter and sugar, then add eggs, one at a time, beating well after each. Fold flour in gently, then stir in date mixture and vanilla then pour into prepared tin.

Bake in center of oven for 30-40mins until cooked. {20mins if using a muffin tin}

To make sauce, bring all ingredients to the boil. Reduce heat and simmer for 5mins. Remove vanilla bean. 
Pour a little sauce over warm pudding and return to the oven for 2-3mins so sauce soaks in. 

Serve warm with ice cream or cream and extra sauce of course!

My Purebaby..

 How was i to refuse?!
I am not really the show Mom type , and i don't think it will be a regular thing.. 
But it was fun. We had fun. 
I am enjoying seeing her sweet face pop up everywhere!

We Heart Crumpler!



Thanks to the ash cloud, Grandma got to stay with us for an extra day! The kids were very excited when we had to head back to the airport to pick her up again {i was not so excited, have you driven to Melbourne airport?}

Anyhow with the extra time she wanted to go shopping and get her self a new camera bag for the new-old camera she had just bought off my brother. With a bit of research it was decided there was no better place to go then Crumpler! Thankfully the clearance store is super close to us!

So off we went, seems the stars were aligned today.. i even managed to get a park right out the front of the shop {yes!} The kids behaved themselves surprisingly while we checked out all the bags. So many cool, colourful, comfy looking bags. Best of all they were all half price! Grandma got herself an awesome 3 Million Dollar Home camera bag.

Feeling pretty chuffed with her purchase Grandma couldn't resist these super cute kids backpacks. That and there was no taking it off L once she had it on.. Lucky little monkeys scored themselves a Baby Pea backpack each.

I have to say they may well be the best kids backpacks i have ever seen! They look so comfortable wearing them, and happily ran around with them on all day long. They absolutely love them! R wouldn't even take his off to go to the toilet.. now that's dedication!

The weather was pretty good in Melbourne over the long weekend, chilly but the sun has been shining.. mostly... We spent lots of time just hanging out as a family, playing in the garden, a trip to the farmers market, park, a spot of shopping, and lots of yummy food!

Grateful..



This week i am feeling super happy and grateful for the long weekend, and my Mum coming to visit!

I know its a little boring, but i am truly grateful for the extra days we will have together. Extra time to spend as a family. Made even more special with a visit from Grandma. It has been about four months since we have seen her. And the joy on all there faces once she arrived, was priceless. She was so surprised to see just how much the little ones have grown!

Grateful for Grandma love, time to be together, and a night out without the kids {yay!}

Off to make some memories!

Little L's First Birthday. .

I know its a bit late, but today i was thinking back to L's  first birthday and i wanted to share these images with you.

We all had a really lovely day, especially L. Somehow she new it was her day and made the most of it, lapping up all that extra attention! She even manage to join in when everyone was singing happy birthday to her!

Riding the Waves..


I have been feeling a little flat this week. I'm not sure exactly why. Just a little coldy and headache-y. The kids are driving me and each other crazy. And it's only Tuesday. I can't really be bothered doing anything. I would love nothing more than to just lie on the couch for a whole day.. and there is no way that is going to happen.

It could be something to do with this dreary Melbourne weather, maybe i need more vitamin D. Its getting me down. I don't mean to sound so pathetic, just need to vent a little.

Today i was dreaming of the warmer weather, sandy beaches and the sun shining on me. It got me thinking about the waves. The sound. The repetition. The highs and the lows. The rise and the fall.

Much like life i think.

Here's hoping for a high tomorrow.

Jamie . .

I have a confessinon to make.. something that you may not know about me..

I love Jamie Oliver!

I think he is such an amazing person. I admire everything he is doing to try and change the way we all eat, educating us about food, and of course his awe-inspiring cooking. I was lucky enough to go to one of his live shows when he was in Melbourne a few years ago, it was brilliant!
So i confess, embarrassingly.. i am a huge, huge fan!
{look at his gorgeous family, how can you not love him?}




His recipes are awesome. I love them all and am yet to have one fail me. Quiet a few have even made there way to my everyday cooking. You know the recipes you always fall back on. The winners. They look impressive but are uncomplicated. Everyone loves them {even the kids}. The ones you know by heart.

So with this chilly weather and winter finally upon us, we have been spending a little more time at home. I have been cooking up a storm and making some cracking meals {even if i do say so myself!}

Tonight was a one pot family favorite. It was totally devoured so i thought i would share it with you.


Jamies Moroccan Lamb.





• 1/2 teaspoon cumin seeds
• 1 tablespoon coriander seeds
• 1 teaspoon fennel seeds
• 1 small dried chilli
• a small bunch of fresh rosemary, leaves picked and finely chopped
• 2 thumb-sized pieces of fresh ginger, peeled
• sea salt and freshly ground black pepper
• extra virgin olive oil
• 4 smallish neck fillets of lamb or about 600g diced lamb
• 4 sweet potatoes, peeled, cut into 2.5 cm/1 inch dice
• 2 red onions, peeled and roughly chopped
• 4 cloves of garlic, peeled and sliced
• 1 tin tomatoes 
• 1 stick of cinnamon
• 2 bay leaves
• a handful of dried apricots
• 285ml (½ pint) boiling water
• 350g/12oz couscous
• a little wine vinegar
• 4 tablespoons natural yogurt


Preheat the oven to 190°C/375°F/gas 5.
Pound up your cumin, coriander and fennel seeds with the dried chillies, rosemary, ginger and a pinch of salt and pepper, stirring in a couple of tablespoons of olive oil. Smear half of this marinade over your lamb before you plait it. Rub and massage it in, then put the meat to one side while you prepare and mix the rest of the marinade in a bowl with the sweet potatoes, onions and garlic.

Brown your marinaded pieces of meat in a pan with a little olive oil. 

Add the sweet potato mixture to the pan and fry your veg for about 4 minutes until the onions are slightly soft. Add your tomatoes, give the pan a shake.
Add 3 wineglasses of water, the cinnamon stick, bay leaves and dried apricots.
Braise in the preheated oven (I suggest you do this with the lid off to give it a little colour) for 1 hour 15 minutes. 
Serve with couscous and natural yogurt. 


Yummo! And in the words of Jamie himself 'Lovely Jubbly' !!
