Can't catch a break


We just can't seem to catch a break at the moment, it seems to be just one thing after another. Things have only just started to settle down after returning from Sydney and now the little ones are sick again! They have coughs, colds, conjunctivitis and Riley was up all last night with a raging fever. Sigh. It never ends. I feel flat, tired and unmotivated. I just can't seem to shake this fog hanging over me, over us.

So it seems this weekend will be another quiet one for us. Bunkering down, laying low and spending lots of time together as a family. Just the way I like it, well preferably without the sickness.

Collingwood Childrens Farm





















We spent Monday with lovely friends, at one of our most favourite places. It was a little chaotic at times and there wasn't much of a chance for the Mums to chat, but oh what fun we had!

Passionfruit cake


Yesterday we made this delicious passionfruit cake. We had an abundance of the fruit which we needed to use up and I just hate waste. It's packed with coconut and fruity goodness, tangy and tastes of summer. Cake and fruit is a perfect combination for me, so this recipe just made sense. And of course I had my favourite assistant helping out.


Ingredients
pulp of 8 passionfruits {to give roughlt 200mls}
100g desiccated coconut
165g Caster sugar
75g plain flour, sifted
4 eggs, lightly beaten
125g unsalted butter, melted
1tsp lemon juice
raspberries to serve, optional

Icing
25g unsalted butter, softened
225g icing sugar, sifted
plup from 1 passionfruit

Method
Preheat oven to 180 degrees. Grease and line 18cm round cake pan.
Pulse the passionfruit pulp in a food processor or with a stick blender to loosen. Set aside.
Combine coconut, sugar and flour in a bowl. Fold in the eggs, butter, lemon juice, pulp and seeds, then fold together until combined.
Pour into the cake pan and bake for 35 minutes. Cool in the pan for 5 minutes then turn out onto a wire rack to cool completely.
For the icing, place butter and icing sugar in an electric mixer and beat until doubled in size then add
passionfruit pulp, mixing well until combined.
Spread icing over cooled cake.

Cubby days returning

       













Its as though the universe new this is just what I needed. Bright sunny days appeared as if out of nowhere and we headed out to our neglected garden. I hung washing and it dried. The little ones ran and played in their beloved cubby. It has been a while since we've been able to get outside without the restriction of bulky coats and hats. We picnicked on the grass, the sun touched our skin and the wind blew in our hair. Such a relief. I love days like these.
