Best Ever Pavlova
It has been a very long time since I've shared a recipe with you. This is one of our favourites, originally by Stephanie Alexander, but I wanted to have a record of it here.
Everyone loves pavlova right? This is a never fail recipe that I always use, delicious with summer berries, passionfruit and lashings of freshly whipped cream. {I have also used this same recipe to make delicious mini meringues}
ingredients
4 egg whites
pinch of salt
250g castor sugar
2 teaspoons cornflour
1 teaspoon white wine vinegar
1 teaspoon pure vanilla
300ml cream, firmly whipped
1 punnet of strawberries
pulp of 4 passionfruit {or any topping you choose}
method
1. Preheat oven to 180 degrees.
2. Line baking tray with baking papper and draw out a 20cm circle on the paper.
3. In a electric mixer beat egg whites and salt until stiff peaks form.
4. Beat in sugar, a little at a time, until meringue is stiff and shiny.
5. Sprinkle over cornflour, vinegar and vanilla and fold in lightly.
6. Pile meringue onto papper lined tray, flattening top and smoothing sides.
7. Place in oven, immediately reduce heat to 150 degrees and cook for 30 minutes.
8. Then reduce further to 120 degrees and for 45 minutes.
9. Turn off oven and leave pavlova in it to cool down completely.
10. To serve pavlova invert onto plate or cake platter, pile on whipped cream and then fruit.
tips
Check all equipment is clean, I give everything a good rinse with boiling water and dry with a clean tea towel beforehand.
Use eggs at room temperature.
Make sure sugar is almost completely dissolved into the egg whites before moving on to step 4.

I tried making one of these last spring but it didn't turn out quite right - will definitely be bookmarking your recipe when I am brave enough to give it another go! It really is the perfect dessert, isn't it?

ReplyDeleteit MUST have passionfruit. Love it with just strawbs and passionfruit or mixed berried ie blueberries, blackberries, raspberries, strawberries

I think I must be the only Australian that doesn't like pavlova. It always looks great, the one in the picture looks fabulous by the way, but there's something about the taste that I just don't like.
ReplyDeleteI love a good pavlova, I have attempted a few times but never quite got it right! Am definately going to give this recipe a go, cos nothing beats it for a summer dessert!! I like mine with berries of any kind and passionfruit! I remember as a kid my aunty making one with peppermint crisp - I think thats where my love for choc mint anything came from! So maybe I could do half and half ; )

We love pavlova in our house too. Looks so pretty with the strawberries piled on top. I look to sneak a few shavings of chocolate through the cream. Delish!

ReplyDeleteThis is the recipe that I use too! Never. Fails. Ever.
ReplyDeleteAlthough I find with my oven I have to knock the temp down a bit lower than what it says in the recipe. The pavlova is always the perfect amount of crunch to soft chewy centre.
